Dungeon Meshi is an Anime about Laios and Laios'crew as they decend into dungeon culinary/cooking... and mistreatment of Marcyle (the straightman - or should we say Elf - of the group). 

That is not all we have great fan service coming from the likes of Senshi with based reverse panty service mixed with feline fanservice (and correct Catonomy) coming from local Nekomimi and Catgirl Izutsumi.

Fans (both Manga and Anime Fans alike) seem to enjoy her ever changing expressions and mistreatment or anxious behavior everytime something goofy happens to her. She is like the Kobeni (from Chainsaw Man) of Dungeon Meshi or even Pomni (From the Amazing Digital Crocus) of Dungeon Meshi.

For those that loved to cook it is something they love as it clicks with Cooks and Chefs that love anime & manga or those that love food because it asks the question "What would Fantasy cuisine taste like". I mean there is *a whole wiki and encyclopedia of info written about it even before it started airing or became popular* including whole channels and case studies on its world building. 
The perfect Manga to Anime adaptation done and implemented by the art directors and team over at Studio Trigger has done nothing more than to propel the Anime to stardom from been an underdog in this seasons lineup to a top 2-5 in all rankings across global mediums (both online and offline).

So why was it under your radar? Well, it is a show about cooking and much as a lot of people are fans of cooking and quick tips here & there (refer to the success YouTube shorts or TikToks or Facebook stories or short form content about cooking), it would have permeated with an audience that loves cooking and the culinary arts BUT sadly not everyone is a master chef and the name kind of put people off (but it might warm up to them). There wasn't also a lot of hype around it until after the show aired and people grew to love the quirkiness of all the characters, from the exchanged straightman vibes to the well timed jokes and we'll cadenced dark moments, that was when things really took and a lot of people took interest in it.
